Blackberry fruit roll ups, using up the last of the summer berries

Any stone free berries work in roll ups, a great way to use up the summer berries taking up space in the freezer. I've chosen to use blackberry. Its that time of year that space needs freeing up in the freezer ready for the festive food preparations. I usually end up turning the last of the summer berries into jam but this year, i've decided on the fruit roll ups. I've been meaning to make some for a few years now but i honestly thought it would be a chore. I was so wrong, these fruit roll ups could not be easier to make and they are delicious!

Not only will you be freeing up space in the freezer but you'll be safe in the knowledge that these are refined sugar, preservative and additive free, only containing natural ingredients.

How to make fruit roll ups
What you will need........
Blackberries ( or berries of choice)
Honey - enough to create your preferred level of sweetness
Lemon juice (1 lemon per 200g berries)
Blender
Greaseproof paper
Dehydrator or oven on lowest setting
Scissors
Air tight jars for storing
Method.........
Add berries, honey and lemon juice into the blender and blitz until you have a smooth pulp.
Line the dehydrator trays, if using, or oven trays with greaseproof paper
If you prefer a smooth roll up, you can sieve the mixture to remove any seeds.
Pour the mixture onto the prepared trays and smooth over, about 2mm in thickness is perfect.
If using the dehydrator, put the trays in and set to 50'c for about 5 hours. Best to check every hour, the time will depend on the moisture content of the berries.
If using the oven, set it to its lowest temperature and check hourly.
The fruit roll up is ready when the mositure is removed. It will feel slighlty sticky but not wet. Make sure there are no squshy areas and continue to dehydrate until these are gone.
The edges may go a little crispy, you can cut these off as they won't roll vry well. Don't discard though as they are equally delicious.
Cut the roll up into strips. I leave the greaseproof paper on to stop the roll ups sticking together but you can remove if you prefer.
Roll each strip up and place into the sterilised jars.
Pop the lid on and store them in the fridge.
Some people say they last 3 months and some say 12. I really couldn't say as they have been eaten before i can test this theory.
